Let me start by saying that I am a meat eater. I love meat filled tacos & always will. However, my cauliflower taco recipe is one of my favourites & want to share it with you. Whether you’re a meat eater or not, I know you can love these tacos! As more & more people are removing meat from their weekly meals, like me, this is a great recipe to work into your weekly meals.
I first tried roasting cauliflower myself around a year ago and I haven’t looked back since. Cauliflower tastes completely different once roasted & is a delicious alternative to chicken / pork for tacos or wraps. Not only does this taste amazing it’s also hell of a lot cheaper than any meat or Quorn alternatives. This is definitely a recipe worth trying, if you think you like cauliflower or not
Ingredients
1 Large avocado
Half of 1 red onion, diced
10 cherry tomatoes or 1 large beef tomato, diced
6 taco sized tortillas
1 medium Cauliflower
1 heaped teaspoon Smoked paprika
Half teaspoon of garlic purée
1 heaped teaspoon of onion granules
1 heaped teaspoon of Fajita seasoning
Bunch of fresh coriander, chopped
Grated cheese & soured cream (optional)
First step is chopping the cauliflower down into small florets. Aim for inch squared pieces and place into a baking tray. Next, mix your spices & garlic with some olive oil, drizzle over the cauliflower and then toss until all pieces are fully coated.
Place the florets into a preheated oven at 200•c and cook until golden brown all over. This can take anywhere from 15-30 minutes, depending on your oven. I like to make sure the edges are crispy / blackened for a rich meaty taste.
While your cauliflower is roasting, this is the perfect time to make guacamole & Pico de Gallo!
For the salsa
Finely chop your tomatoes & red onion and place in a bowl. – Mix with chopped coriander leaves & finely chopped coriander stalks. – Add salt, pepper & a squeeze of lime juice. – Let it rest for around 15 minutes to let all the flavours come together.
For the guacamole
Chop your avocado and then mash using the back of a fork. – Add salt, pepper & chilli flakes. (Done!)
Once your cauliflower is ready, serve everything in individual bowls & build your tacos. I personally love to add sour cream, cheese, salad leaves & extra coriander. For a vegan version, either use vegan sauce / cheese or skip these ingredients. The guacamole makes the taco deliciously creamy already, I just love adding cheese to most meals!
The roasted cauliflower is the star of this dish & even those who shun cauliflower, would be surprised how delicious this tastes!
